Serves 2

A stack of golden buckwheat pancakes spread with white coconut yogurt and topped with blueberries and a dusting of cinnamon, with a scoop of coconut yogurt mixed with cacao nibs on a blue-rimmed plate

Ingredients

  • 100g/3½oz/¾ cup buckwheat flour (labelled gluten-free if needed)
  • 1 tsp gluten-free baking powder and a pinch of salt
  • 1 tbsp ground flaxseed (about 7g)
  • 2 tbsp shelled hemp seeds (about 20g)
  • Half a small ripe banana (about 50g/2oz peeled), well mashed
  • 150 to 175ml/⅔ to ¾ cup unsweetened coconut drink (or another plant drink)
  • Half a tsp ground cinnamon, plus a little for dusting
  • 1 tsp (5ml) rapeseed (canola) oil, for the pan
  • 150g/5oz/⅔ cup plain coconut yogurt (made from coconut, not soya)
  • 120g/4oz/¾ cup blueberries
  • 10g/1 tbsp cacao nibs

Method

  1. Mix the buckwheat flour, baking powder, salt, flaxseed, hemp seeds and cinnamon in a bowl. Whisk the mashed banana with the coconut drink, pour into the dry ingredients and stir to a thick batter. Leave for 5 minutes so the flaxseed thickens it. If it is then too stiff to drop from a spoon, stir in a little more drink.
  2. Heat a large non-stick frying pan (skillet) over a medium heat and brush with a little of the oil. Add 2 tablespoons of batter per pancake, spreading each to about 9cm/3½in, and cook for 2 to 3 minutes, until bubbles appear and the edges look set. Flip and cook for 1 to 2 minutes more, until golden and cooked through. Repeat with the rest of the batter and oil to make about 8 pancakes.
  3. Spread the top pancake of each stack with most of the coconut yogurt. Stir the cacao nibs into the rest of the yogurt to serve on the side.
  4. Top with the blueberries and a dusting of cinnamon and serve warm.
  5. Cooled pancakes keep in the fridge for up to 2 days, or freeze them between sheets of baking paper for up to 1 month; reheat in a toaster or dry pan until hot.

Why it works

A serving gives you about 13g of protein and 7g of fibre for 458 calories, from the buckwheat, hemp seeds and flaxseed.

Why buckwheat. Despite its name, buckwheat is not related to wheat. It is a seed that is naturally free from gluten, with a nutty flavour that suits pancakes. Choose a flour labelled gluten-free if you need it, as some is milled alongside wheat.

No eggs needed. Ground flaxseed thickens when mixed with liquid and, with the mashed banana, binds the batter. Hemp seeds add about 3g of protein to each serving without changing the taste.

Why it is tagged for blood sugar. With 52g of carbohydrate, 7g of fibre and some protein and fat, these pancakes are less likely to cause a sharp rise in blood sugar than pancakes made with white flour and syrup. Blueberries add sweetness without added sugar.

Free from gluten, dairy, eggs, nuts and soya as written. Coconut is not treated as a tree nut under UK, EU or US allergen labelling rules. For another vegan pancake, try the vegan banana oat pancakes.
