Light, fluffy pancakes made without eggs or dairy: ripe banana, blended oats and soya milk, cooked until golden and stacked high with raspberries, blueberries and a drizzle of maple syrup. 9g of fibre a serving.

Breakfast

Serves 2 (4 pancakes each)

A tall stack of fluffy golden pancakes topped with raspberries and a drizzle of maple syrup, with blueberries on the plate and a bowl of berries behind

Ingredients

  • 1 large ripe banana (about 100g/3½oz peeled)
  • 60g/2oz/⅔ cup rolled oats
  • 60g/2oz/½ cup plain flour (all-purpose flour)
  • 2 tsp baking powder
  • 200ml/generous ¾ cup unsweetened soya milk (soy milk)
  • 1 tsp vanilla extract and a pinch each of ground cinnamon and salt
  • 2 tsp (10ml) rapeseed (canola) oil, for the pan
  • 75g/2½oz raspberries
  • 75g/2½oz blueberries
  • 1 tbsp (20g) maple syrup

Method

  1. Blitz the oats in a blender until they look like coarse flour. Add the banana, soya milk, vanilla, cinnamon and salt and blend until smooth.
  2. Add the flour and baking powder and pulse briefly, just until combined. Leave the batter to stand for 5 minutes; it will thicken slightly.
  3. Heat a non-stick frying pan (skillet) over a medium heat and brush with a little of the oil. Pour in about 3 tbsp of batter per pancake, cooking 2 or 3 at a time.
  4. Cook for 2 to 3 minutes, until bubbles appear on the surface and the edges look set, then flip and cook for 1 to 2 minutes more, until golden and cooked through. Keep warm in a low oven (120C/100C fan/250F) while you cook the rest, brushing the pan with oil between batches. The batter makes about 8 pancakes.
  5. Stack 4 pancakes on each plate, top with the berries and drizzle with the maple syrup.

Why it works

Four pancakes give you about 9g of fibre for 403 calories, thanks to the oats and berries. Ripe banana sweetens the batter and helps bind it, so no eggs are needed.

How vegan pancakes stay fluffy. Baking powder does the lifting that eggs would normally help with. Letting the batter rest for 5 minutes lets the oats absorb some liquid, which gives thicker, softer pancakes.

Why blend the oats. Blitzing oats into flour makes a smooth batter and adds fibre, including beta-glucan, compared with using plain flour alone.

Berries on top. Raspberries are one of the highest-fibre fruits, and blueberries add colour and sweetness, so you need only a little maple syrup.

Not tagged for blood sugar, because the pancakes bring 64g of carbohydrate; serve with soya yogurt for extra protein. Contains wheat, oats (gluten) and soya. For other breakfasts, try the banana oat breakfast cookies or the tofu scramble with turmeric and spinach.
