A wooden bowl of thick bright pink smoothie topped with strawberries, blueberries, diced kiwi, coconut flakes and a crunchy topping, on a linen cloth with dried flowers

Ingredients

  • 150g/5oz/1¼ cups frozen raspberries
  • 1 ripe banana (about 120g/4oz peeled), sliced and frozen
  • 100g/3½oz/scant ½ cup coconut yogurt alternative (unsweetened, made from coconut, not soya)
  • 60ml/¼ cup unsweetened coconut drink, plus a splash more if needed
  • To top: 80g/3oz strawberries, halved; 40g/1½oz blueberries; 1 kiwi (about 70g/2½oz peeled), diced
  • 15g/1 tbsp raw buckwheat groats (labelled gluten-free if you need it)
  • 20g/2 tbsp hemp seeds, 10g/1 tbsp pumpkin seeds and 5g/1 tbsp coconut flakes

Method

  1. Slice the banana and freeze it for at least 2 hours, or overnight. Frozen fruit is what makes the bowl thick enough to eat with a spoon.
  2. Toast the buckwheat groats and pumpkin seeds in a dry frying pan (skillet) over a medium heat for 3 to 4 minutes, shaking the pan, until the buckwheat smells nutty and the seeds start to pop. Tip onto a plate to cool.
  3. Blend the raspberries, banana, coconut yogurt and coconut drink in short bursts, stopping to scrape down the sides, until thick and smooth. Add more drink a teaspoon at a time only if the blades stick.
  4. Spoon into two bowls and top with the strawberries, blueberries, kiwi, toasted buckwheat and pumpkin seeds, hemp seeds and coconut flakes. Eat straight away.

Why it works

A bowl gives you about 9g of protein and 11g of fibre for 325 calories, with plenty of vitamin C from the raspberries, kiwi and strawberries.

The secret to a thick bowl. Frozen fruit and very little liquid. Blend in short bursts and scrape down the sides; adding more drink turns it into a smoothie you drink.

Crunch without granola. Toasted buckwheat groats taste nutty and stay crisp, a gluten-free alternative to oat granola. Hemp and pumpkin seeds add protein and healthy fats.

Why it is not tagged for blood sugar. Most of the 33g of carbohydrate is natural sugar from blended fruit, and with 9g of protein it is a lighter breakfast. The fibre, seeds and coconut yogurt help slow how quickly it is absorbed. For steadier blood sugar, add an extra tablespoon of hemp seeds.

Free from gluten, dairy, soya and nuts. Contains coconut, which is not classed as a tree nut in the UK, EU or US. Check the coconut yogurt and drink are soya-free. The photo shows a granola topping; use one labelled gluten-free and nut-free if you prefer it. For a higher-protein bowl, try the mixed berry protein smoothie bowl.
