Breakfast

Serves 2 (1 slice each)

Thick slices of toasted sourdough piled with creamy garlic mushrooms and wilted spinach, with slices of avocado on a white plate

Ingredients

  • 250g/9oz chestnut (cremini) mushrooms, sliced
  • 2 tsp (10ml) olive oil
  • 2 cloves garlic (about 8g), finely chopped
  • A few sprigs of fresh thyme, leaves picked, or half a tsp dried thyme
  • 100g/3½oz baby spinach
  • 2 tbsp (30ml) oat cooking cream (or another plant-based single cream/light cream)
  • 1 tsp (5ml) lemon juice
  • 2 large slices wholegrain sourdough (about 50g/1¾oz each)
  • 1 small ripe avocado (about 100g/3½oz flesh), sliced
  • A pinch of salt and black pepper

Method

  1. Heat the oil in a large frying pan (skillet) over a medium-high heat. Add the mushrooms in a single layer and cook for 5 to 6 minutes, stirring only now and then, until they release their liquid and turn golden.
  2. Add the garlic and thyme and cook for 1 minute, until fragrant.
  3. Add the spinach a handful at a time and stir until wilted, about 1 to 2 minutes. Stir in the oat cream and lemon juice and bubble for 1 minute until lightly coated. Season with salt and plenty of black pepper.
  4. Meanwhile, toast the sourdough.
  5. Pile the mushrooms and spinach onto the toast and serve with the sliced avocado, 1 slice each. Eat straight away.

Why it works

A slice gives you about 13g of protein and 9g of fibre for 324 calories, with healthy fats from the avocado.

The secret to golden mushrooms. Use a hot pan and do not stir too often. Mushrooms release a lot of water; once it evaporates they start to brown, which is where the flavour comes from.

Creamy without dairy. A couple of spoonfuls of oat cooking cream make a silky sauce, and a squeeze of lemon keeps it fresh. Garlic and thyme do the rest.

Spinach for colour and goodness. Baby spinach wilts in seconds and adds folate and vitamin K. Wholegrain sourdough holds up well under the juicy topping.

Not tagged for blood sugar, because the bread brings most of the 25g of carbohydrate. Contains wheat and oats (gluten); soya if you use soya cream. Seeded sourdough may also contain sesame. For other savoury breakfasts, try the avocado toast with jammy egg or the tofu scramble with turmeric and spinach.
