A bowl gives you about 18g of fibre and 19g of protein for 436 calories. That is over half of the 30g of fibre a day recommended for adults in the UK; most adults there eat about 20g.
Beans for protein and fibre. Black beans are one of the best plant sources of both. Adding them to the tray for the last 10 minutes warms them through and crisps the skins slightly.
Why it is tagged for blood sugar. With 36g of carbohydrate, most of it from beans and vegetables rich in fibre, this bowl is unlikely to cause a sharp rise in blood sugar.
Roast hot and spread out. Cauliflower and peppers need a hot oven and space on the tray to char. Crowded vegetables steam and turn soft and pale.
Contains soya (in the yogurt). Use plain Greek yogurt instead if you are not vegan. For other bean dinners, try the sweet potato and black bean tacos or the harissa chicken with cauliflower and chickpeas.
