Serves 4

A small white cup of chunky guacamole with a golden toasted pitta chip dipped in it, garnished with coriander, beside cherry tomatoes and halved avocados

Ingredients

  • 2 large ripe avocados (about 300g/10½oz flesh)
  • 100g/3½oz ripe tomatoes or cherry tomatoes, deseeded and chopped
  • 30g/1oz red onion, very finely chopped
  • 1 small green chilli (about 10g), deseeded and finely chopped
  • 10g/a small handful fresh coriander (cilantro), chopped, plus a few leaves to serve
  • 1 lime, juiced (about 20ml/4 tsp)
  • 2 wholemeal pitta breads (about 60g/2oz each; check the label for milk if you need them vegan)
  • 2 tsp (10ml) olive oil
  • A pinch of salt

Method

  1. Heat the oven to 200C (180C fan, 400F). Cut each pitta into 8 triangles, separate the layers if you like them thinner, and spread over a baking tray (baking sheet). Brush with the oil, sprinkle with a little salt and bake for 8 to 10 minutes, turning halfway, until golden and crisp. They crisp up further as they cool.
  2. Meanwhile, put the onion, chilli, lime juice and a pinch of salt in a bowl and leave for a couple of minutes to soften the onion.
  3. Halve the avocados, remove the stones and scoop out the flesh. Add half to the bowl and mash with a fork until fairly smooth, then add the rest and mash lightly, leaving plenty of chunks.
  4. Fold in the tomatoes and coriander, then taste and add more lime or salt if needed.
  5. Scatter with coriander and serve with the warm pitta chips. To store, press cling film (plastic wrap) onto the surface of the guacamole, chill and eat within a day; the top may darken, so stir before serving.

Why it works

A serving has about 8g of fibre for 236 calories. Most of the fat comes from avocado, which is rich in monounsaturated fat, the same type found in olive oil.

Why chunky. Mashing only half the avocado smoothly and leaving the rest in pieces gives guacamole a fresh texture that is much more satisfying than a smooth purée.

Lime does two jobs. Lime juice adds sharpness and slows down browning, although it cannot stop it completely. Soaking the onion in the lime juice first also takes the harsh edge off it.

Better than crisps (chips). Baking wholemeal pitta with a little oil gives you crunchy chips with much less fat than most bagged tortilla chips, and a little more fibre. Ripe tomatoes and red onion add freshness.

Not tagged for blood sugar, because the pitta brings most of the 18g of carbohydrate; serve with vegetable sticks for a lower-carbohydrate option. Contains wheat (gluten); some pitta breads also contain sesame or soya, so check the label. For other dips, try the beetroot and walnut hummus or the tzatziki with vegetable sticks.
