Serves 4

A white bowl of creamy risotto with pieces of green asparagus and courgette, topped with a tangle of fresh pea shoots

Ingredients

  • 300g/10½oz/1½ cups risotto rice, such as arborio or carnaroli
  • 4 tsp (20ml) olive oil
  • 1 medium onion (about 100g/3½oz), finely chopped
  • 2 cloves garlic (about 8g), finely chopped
  • 1.2 litres/5 cups hot vegetable stock (check the label if you need it gluten-free)
  • 250g/9oz asparagus, woody ends snapped off, cut into 3cm/1¼in pieces
  • 1 medium courgette (zucchini, about 200g/7oz), diced
  • 1 unwaxed lemon: finely grated zest and 4 tsp (20ml) juice
  • 40g/1½oz Italian-style vegetarian hard cheese, finely grated (traditional Parmesan, Parmigiano Reggiano, is made with animal rennet, so it is not vegetarian)
  • 20g/a large handful pea shoots, to serve
  • Black pepper and a pinch of salt, if needed

Method

  1. Keep the stock hot in a pan over a low heat. Heat the oil in a large, wide pan over a medium heat and cook the onion for 6 to 8 minutes, until soft but not coloured. Add the garlic for 1 minute.
  2. Add the rice and stir for 1 to 2 minutes, until the grains are coated and slightly translucent at the edges.
  3. Add a ladleful of hot stock and stir until almost absorbed, then keep adding stock a ladleful at a time, stirring often, for 18 to 20 minutes.
  4. After 10 minutes, stir in the courgette. After 14 minutes, add the asparagus. Keep adding stock until the rice is creamy and tender but still has a slight bite; you may not need all the stock.
  5. Take the pan off the heat and stir in the lemon zest, lemon juice and most of the cheese. Season with black pepper, and salt only if needed (the stock and cheese are salty). Cover and leave to stand for 2 minutes.
  6. Spoon into bowls and top with the remaining cheese and the pea shoots. Cool any leftovers within an hour, keep them in the fridge, eat within 24 hours and reheat only once until steaming hot.

Why it works

A bowl has 385 calories and only 8g of fat, much less than a classic risotto finished with lots of butter and cheese. Asparagus and courgette add colour, fibre and folate.

The secret to creamy risotto. Adding hot stock a ladleful at a time and stirring often helps the rice release its starch, which makes the sauce creamy without needing cream or butter.

No wine needed. Many risottos start with white wine. Here, lemon zest and juice stirred in at the end give the same bright, fresh flavour.

Is it vegetarian? Traditional Parmesan (Parmigiano Reggiano) is always made with calf rennet, so it is not vegetarian. Use an Italian-style vegetarian hard cheese instead; see Parmesan and hard cheese.

Not tagged for blood sugar, because risotto rice brings 64g of carbohydrate and little fibre. Add a side salad, or stir in a drained tin (can) of cannellini beans for extra protein. Contains milk, and possibly egg (some vegetarian hard cheeses) and celery (some stocks), so check the labels. For another risotto, try the mushroom and barley risotto.
